Five Ingredient Potato Wedges

Some weeks just don’t go as planned, amirite? Like the end of last week and the beginning this week – sort of living in a trippy Groundhog Day experience these days. But anywho… cut to last week on Friday. I really meant to get my life together by Friday and post a recipe.

Did it happen? No. Did I still manage to do a ton of things that day? Of course. Am I worried about not posting? Sort of. I really feel like posting on this blog helps me in stretching my creative muscle while doing something good for my health. I don’t post this for you (but, I mean, please comment and try the recipes because they’re super good), I do this for me. And I had forgotten that.

Additionally, I had forgotten how good potato wedges are! *Gasp* But no, they are so so good and this recipe is super easy, perfect for a dinnertime side that even our pickiest eater won’t be able to pass up!

Five Ingredient Potato Wedges

For your ingredients:

  • 2 Medium Russet Potatoes
  • 3 TBSP Olive Oil
  • 1 TBSP Salt
  • 1 TBSP Garlic Powder
  • 1 TBSP Onion Powder

Total Prep Time: 20 Minutes // Total Cook Time: 35 Minutes

  1. Wash the potatoes and slice them in half, then in thin slices about 1/4th inch thick.
  2. Pre-heat the over to 350 degrees.
  3. Add potatoes, olive oil, and all seasonings to bowl and shake well until all potatoes are decently covered.
  4. Place on sheet pan and bake for 35 minutes.

Yields 3 servings per batch above. Estimated Weight Watchers Points: 5sp per serving 

I know it’s a little higher in points than I normally like to go, but I do love a good potato!
